Enchilada Casserole


2lbs ground beef
1 onion chopped
1 pkg taco seasoning
1 c. Cheddar cheese
1 c. Monterey Jack cheese (or another kind you like)
1 can enchilada sauce
1 can cream of mushroom soup
1 soup can of water
8-10 (10inch) flour tortillas


1. For sauce & meat mixture – brown meat;drain. In saucepan mix enchilada sauce, soup, water and taco seasoning. Heat on low till warm.
2. Oil bottom & sides of a 9×13 inch baking dish. Tear or cut into pieces 8 to 10 tortillas.
3. Grate cheese. Set aside.
4. Layer in baking dish 1/2 of shells, sauce & meat mix & cheese. Repeat with other half of ingredients.
5. Bake 45 minutes at 350° covered.
